Oatmeal and brownies are two of my favourite things. Putting them together is pure perfection!
I’ve been working on baked oatmeal recipes for weeks. I’ve tried half a dozen, looking for a ratio that E and I both enjoy. I wanted something that he could eat for breakfast that was healthy. Of course, he loves this brownie baked oatmeal. Except I don’t always want him eating chocolate for breakfast. This is more of a snack or after lunch treat!
So while this recipe is a winner I’m still working on breakfast appropriate options.
We made this most recent batch at Nana’s house. We are still waiting for our kitchen to be done so after our trip to Newfoundland we hunkered down with Nana and Papa.
It’s their turn for rearranged furniture, sticky floors and fingerprinted windows!
I’m so thankful we have a place to stay while the majority of the renovations are happening. But I’m hopeful we can get into our house soon, even if we don’t have counters or plumbing in the kitchen. It’s been about a month since I’ve slept in my bed and I’m tired of living out of a suitcase.
The frustration of renovations! More on those later 😉
Anyways, this baked oatmeal is so easy to make and uses staple pantry ingredients. It’s not overly sweet and if you don’t add chocolate chips it could be a breakfast dish! It’s also versatile. I’ve tossed in some coconut and omitted the peanut butter and it turns out fine!
It’s not overly sweet so if you prefer something sweeter increase your sugar by a few tablespoons.
So if you need a tasty breakfast or snack, whip up a batch of these!

Brownie Baked Oatmeal
Adapted from Living in Happy Place
Ingredients
- 2 1/4 cups quick oats
- 1/3 cup granulated sugar
- 2 TBSP cocoa powder
- 1 1/2 cups milk of choice
- 1 egg
- 1 tsp vanilla
- 1/2 cup applesauce*
- 1/4 cup peanut butter
- 1/4 cup chocolate chips (optional)
Directions
- Preheat oven to 350°F. Line an 8×8 pan with parchment paper.
- In a large bowl, mix oatmeal, sugar and cocoa powder. Add milk, egg, vanilla, applesauce and peanut butter. Stir until combined. Add chocolate chips (if using) and stir until incorporated.
- Pour mixture into prepared pan. Cover with tin foil and bake for 15 minutes.
- Remove tin foil and continue baking for an additional 15 minutes or until a toothpick comes out clean.
- Allow to cool and serve!
Notes:
I always use unsweetened applesauce.
I store these in a sealed container in the fridge. Then I microwave pieces as we want them, about 10-15 seconds depending on your microwave.
