I am always on the lookout for something different to make for lunch. I like to change it up and play around with different foods. It usually is some sort of breakfast-type food, eggs, toast, pancakes etc. When I stumbled on the idea to make French toast sandwiches I had to make them!

It’s so simple. As easy as making French toast. And it’s a fun lunch for my 3 year old. Sort of like a grilled cheese except it’s French toast and peanut butter, dipped in maple syrup!

You can change up your sandwich ingredients. We’ve done peanut butter/chocolate chips, peanut butter/honey/cinnamon and peanut butter/jam. Anything that goes with peanut butter would go in this sandwich!
This recipe makes one sandwich, to make more simply double or triple the ingredients. I’m not at the stage yet where we need enough food to feed an army (although my boys are approaching that stage 🙈) So my ingredient lists are just enough for us.
I also have done this both in the pan and the air fryer. I’m not sure which I like better. The pan makes a more traditional French toast whereas the air fryer crisps the bread better.
Either way they were delicious!
A nice change from the regular lunch options for us. If you need to change things up and try something new, French toast sandwiches won’t disappoint!

French Toast Peanut Butter Sandwich
Makes 1 sandwich
Prep time: 5 minutes
Cook time: 8 minutes
Total: 13 minutes
Ingredients
- 2 slices of bread
- 1 egg
- 1 tsp sugar
- 1 1/2 TBSP milk
- 1/2 tsp vanilla
- Peanut butter
- Optional: jam, chocolate chips, honey, cinnamon, sprinkles
Directions – Pan

- Whisk together egg, vanilla, milk and sugar in a medium-sized bowl.
- Heat a pan over medium-high heat. Add oil to pan. Take 2 slices of bread and put peanut butter on one side of each piece.
- Dip your first piece into your egg mixture, peanut butter side up. Lay it in your prepared pan egg side down. Add additional sandwich mixins (jam, chocolate chips, honey etc.) to this piece.
- Spread peanut butter on the second piece and dip it in the egg mixture. Lay it in the pan on top of the first, peanut butter sides in the middle.
- Flip once it has browned and cook the other side of the sandwich.
- Once both sides have browned, remove from the pan. Serve with maple syrup and enjoy!
Directions – Air Fryer

- Whisk egg, vanilla, sugar and milk. Take two pieces of bread and put peanut butter on one side of each piece.
- Dip the non-peanut butter side in the egg mixture. Place in the air fryer (we use this one). Add additional topping.
- Dip the second piece of bread into the mixture (peanut butter side up). Place on top of the bread in the air fryer to make a sandwich (peanut butter in the middle). Use toothpicks to hold the sandwich together.
- Air fry at 350°F for 8-9 minutes, flipping halfway through.*
- Serve with maple syrup.
Note: Every air fryer is slightly different so check your sandwich periodically and flip when it is browning on top
