Do you love chocolate soft serve ice cream but don’t want the extra calories? Do you have a DASH ice cream maker? Then I have the recipe for you!
Table of Contents
I love ice cream, especially soft serve. It’s my weakness. My husband also loves ice cream so I bought him the Dash My Mug Ice Cream Maker as a birthday gift.
The My Mug set has two mugs that you freeze and then you can mix up ice cream or other frozen desserts for a tasty treat.
I think I’ve used it more than my husband though (lol).
It’s taken me some time to perfect a recipe, one without eggs or high fat. And let me say this one is pretty near perfect.
Not only is it low(er) calorie but it also can be made dairy free if you have a milk allergy, and you can use whatever type of sweetener you like. So if you are on a low calorie diet (or diabetic) you can use a low carbohydrate milk (like cashew milk) with sugar-free sweetener and you will have a sweet treat without the worry!
It’s a pudding recipe, made on the stove. So it does take some prep as you will need to make the pudding and let it cool slightly before making it into ice cream.
It’s definitely worth the results!
And if you make the full recipe, it leaves you with leftover pudding which in my opinion is always a good thing!
Notes Before You Start
Be sure to freeze your Mug Bowl as per instructions. Leave it in the freezer until you are ready to pour the mixture in.
The pudding is easy to make but you have to be present and stirring for most of the 8-9 minutes while it simmers. So don’t plan on starting it and then walking away!
You can use the pudding once it has cooled to room temperature but you will get better results (a better ice cream texture) if you wait two hours for the pudding to cool in the fridge.
I used about 1/3 of a cup of pudding in the ice cream maker. I eye-ball it, filling it about half way so it doesn’t overflow the mug when mixing.
I have not tried this pudding recipe with any other ice cream maker but I imagine it would work just as well!
You also can enjoy the pudding as a pudding, it tastes great that way too!

DASH Ice Cream Maker Soft Serve Recipe – Pudding
Original pudding recipe adapted from Delightful Adventures.
Ingredients
- 5 TBSP sugar*
- 3 TBSP cornstarch
- 3 TBSP cocoa powder
- 2 cups milk (of choice)
- 1 tsp vanilla
*you can use granulated sugar or a liquid (maple syrup/honey) – simply reduce milk by amount of sweetener liquid used

Directions
- Combine sugar, cocoa powder and cornstarch in a pot. Whisk until no lumps remain. If using a liquid sweetener, whisk in with the milk.
- Slowly whisk in milk until combined.
- Over medium-high heat simmer the mixture, stirring consistently until thick. This should take 8-9 minutes. You want the pudding to coat the back of a spoon, and drip slowly off of it. You want the mixture to simmer, not boil!
- Remove from heat and stir in vanilla.
- Let it cool on the stove for 15 minutes. Whisk periodically.
- Once the mixture has cooled to room temperature, you have two options:
- Option 1: Put pudding in a bowl and place plastic wrap or parchment paper directly on top of the pudding to prevent a skin from forming. Seal container and put in the fridge for at least 2 hours to continue thickening. After it has cooled and thickened you can use it in your ice cream maker (according to manufacturer’s directions). It likely will only take about 10 minutes to become ice cream and will not need to be put in the freezer for additional freezing.
- Option 2: If you can’t wait the two hours, I have used the pudding once it’s cooled to room temperature in my Dash ice cream maker (according to manufacturer’s directions)! It takes about 15 minutes of mixing and then pop the bowl in the freezer for 5-10 minutes for final freezing.
- Regardless of which option you choose, store leftover pudding in the fridge with its layer of plastic wrap protection. It’s best consumed within a day or two but will last 5 days.
- Enjoy!
