Peanut Butter Protein Balls

Peanut butter protein balls

We had a week of summer weather last week. Temperatures in the upper 20s and glorious sunshine. It was a much-needed refresh.

My toddler slept better, ate better and was so happy to be outside.

I’ll admit I’m feeling a little worn out now. I tried to squeeze in as much outdoor activity as possible and need to build my stamina.

So I bought some protein powder to help keep me going and now I’m stocking my fridge with homemade protein balls!

These are great for a quick pick-me-up when I’m feeling hungry. Or after my morning workout when I’m packing everyone up to go outside and don’t have time to make a shake.

Life is busy as a mom, especially with a toddler and a baby on the move. I have to be able to eat on the go (I’m often munching a granola bar while pulling the wagon). So I love an easy recipe like this one. Throw a few ingredients together, mix, roll and you’re done!

They keep in the fridge so I can pop one or two in my mouth and keep going. My husband also enjoys them and I’m glad there are some high protein snacks for him in the house. Trying to keep everyone fed is a full time job!

Peanut Butter Protein Balls

Original recipe from Salt & Baker

Makes approximately 24 (small) balls

Ingredients

  • 1 cup oats
  • 1/4 cup chocolate chips
  • 1/3 cup protein powder
  • 1/2 cup peanut butter
  • 2 1/2-3 1/2 TBSP honey or maple syrup
  • 1/2 tsp vanilla
  • 2-3 tsp water

Directions

  1. Mix together oatmeal, chocolate chips, protein powder, peanut butter and honey. Add water, 1 tsp at a time until your dough sticks together enough to roll.
  2. Roll dough into balls, about 1/2 TBSP in size.
  3. Put in refrigerator to set (about 20 minutes). Enjoy!

Note: These should be stored in a sealed container in the fridge up to 5 days or in the freezer for longer.
