When you’re on a tight diet, but still want something fudgy and sweet, try these almond flour brownies. Sure to please everyone!

Are you a brownie lover? That rich chocolatey flavour that makes your house smell warm and inviting? I love brownies, they are one of my weaknesses. They definitely are not diabetic friendly, at least not in their standard, traditional form. So I found a recipe that is diabetic friendly, yay!

These almond flour brownies are really good. I think it’s one of my favourite almond flour recipes. In fact you probably won’t even know they’re made with an alternative flour (and sugar)! My husband even enjoys them and he turns his nose up at just about everything almond flour.

And they’re good for more than just diabetics, if you are gluten free or need a dessert option that is gluten free, these will do the trick! No one will be the wiser, that’s the great part.

Of course, if you are making them for non diabetics or children, you can use regular granulated sugar too.

I still have a pretty full bag of almond flour left and my time being pregnant is coming to an end, so I likely will be whipping these up as a treat after baby is born. I will still be diabetic after pregnancy but I control things with diet and exercise and won’t have to contend with pregnancy hormones that affect blood sugars.

I’m looking forward to not being so strict with myself in the food department. In other words, being able to eat a normal sandwich with bread if I want.

I’m also looking forward to wearing my old pants again, or at least having more than 4 options for pants. We’ve had some warm weather which also has been an issue as I don’t have any maternity shorts and definitely am not buying any! Pregnancy problems, I tell you.

Anyways, this recipe is easy peasy and can be made in a matter of minutes (plus bake time). I’ve reduced the sugar slightly but if you like sweeter brownies increase it to 1/2 cup. I’ve also done this recipe with melted coconut oil and while it worked out fine, I prefer it with butter (has that more familiar brownie flavour). Otherwise it’s a pretty standard recipe that mixes up quickly and tastes delicious. The original recipe is from Instrupix.

Almond Flour Brownies

Ingredients

  • 2 eggs
  • 1/3 cup granulated sugar (or sugar alternative)
  • 1 tsp vanilla
  • 1/3 cup cocoa powder
  • 1/4 tsp baking powder
  • 1/2 cup almond flour
  • 1/2 cup melted butter
  • 1/4 cup chocolate chips (optional)

Directions

  1. Preheat oven to 350. Grease or line an 8×8 pan.
  2. In a large bowl, mix your eggs, sugar and vanilla until well combined. Then add remaining ingredients and mix.
  3. Pour into prepared pan. The batter will be thick and need to be spread to the edges of the pan.
  4. Bake for 23-25 minutes. The centre should still be slightly moist as they will continue to bake in the pan.
  5. Allow to cool for about 10 minutes before slicing. Enjoy!
