Almond Flour Pancakes (Diabetic Friendly)

For the days when you need a diabetic-friendly meal, try these almond flour pancakes!

It was Shrove Tuesday/Pancake Tuesday the other day so naturally we had pancakes. I’m trying to be really careful about my carb intake and decided to pull out a recipe for more diabetic friendly pancakes.

Pancakes are not diabetic friendly, like at all. It’s all carb with no protein and then you put more carb on top with some sort of syrup.

Sure they taste great but they also will spike blood sugars, even for non diabetics.

Almond flour is a great alternative because it is low in carbohydrates and high in protein. However it can’t be subbed cup for cup with flour, it requires specific ratios. It also has different texture than flour, even when finely ground it can be a little bit gritty. It makes good pancakes though and I was glad I had the option.

So E made his pancakes and I made mine. There were a ton of leftovers because C was at work…it was pancakes for days. Not for mommy though. This almond flour recipe is for one person. Yes you read that right. This recipe will make 3 medium sized pancakes or 2 large pancakes. Don’t be fooled by the quantity, it’s the quality that counts, they are filling!

But I’ve found this recipe to work well. You may want to add additional liquid (water/milk/apple sauce) if you prefer a thinner batter. Same as the sweetener, depending on your preference you can add more. I always put cinnamon in my recipes (which is also good for diabetics!) but you can omit this or add nutmeg etc.

As for your topping…maybe you want to indulge in maple syrup because of your low carb pancake! Or like me, peanut butter and jam (because I don’t do syrup). This pancake will hold any topping you like.

Almond Flour Pancakes

Ingredients

  • 1/2 cup fine ground almond flour
  • 1/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 egg
  • 1/4 cup milk or water
  • 1/2 TBSP apple sauce no sugar added is best
  • 2 tsp sweetener (sugar or alternative) or to taste
  • 1/4 tsp vanilla

Directions

  1. Fluff the almond flour with a whisk or fork. Then add baking soda and cinnamon, stir until combined.
  2. Add remaining ingredients and mix until combined. You should have pancake batter consistency.
  3. Heat pan to medium/low heat and coat with oil (I use coconut oil). Use a cookie scoop to pour batter into prepared pan. Cook pancakes on stove as you would a regular pancake. Flip when they are just starting to bubble.
  4. Top with your favourite topping!
