Looking for an easy one-pot meal? Try this Italian beef and rice!

I’m all about simple meals that use ingredients I can find in my pantry. I don’t have time for excessive chopping, peeling, boiling, baking or any other time-consuming, multi utensil using recipe when my kids are in meltdown mode right before supper.
You probably know what I mean!
This recipe is not only one-pot but my kids actually ate it! At least one kid ate it, my toddler doesn’t count because some days he won’t even eat chocolate chip cookies if the mood strikes him.

One-Pot Beef and Rice Skillet Recipe
Original recipe for this beef and rice skillet is adapted from I Wash, You Dry
Prep time 5 minutes
Cook Time 25 minutes
Ingredients
- 1 lb ground beef
- 1/2 TBSP dried minced onion
- 15oz diced tomatoes
- 1 1/2 cups mixed frozen vegetables
- 3/4 cup white rice
- 2 cups beef broth
- 1 cup fresh spinach
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1/2 tsp dried basil
- salt (to taste)
- 1 1/2 cups shredded cheese (mozzarella, cheddar or marble) divided
- parsley (optional)
Directions
- In a large pot with a lid (like a dutch oven or large frying pan), brown the beef over medium-high heat. Drain excess fat.
- Add dried onion, tomatoes, veggies, rice, beef broth and spices (oregano, garlic powder, basil and salt to taste). Reduce heat to a simmer, cover and let cook until rice is tender, about 17 minutes.
- Fluff rice with a fork and add spinach and 1/2 cup of cheese into mixture. Stir until spinach is wilted and cheese is melted. Then top with remaining 1 cup of cheese. Cover with lid for 2-3 minutes or until the cheese is melted. Sprinkle with parsley and enjoy!
