Three ingredients you ask? Yes! That’s all it takes to make these yummy (and healthy) cookies. That also means you don’t have a bunch of dishes to wash, which for me is a huge deal.

Our kitchen is still undergoing renovations. I have plywood for counters but no sink. I love the kitchen even without it being done, it finally feels like it’s ours. It’s our design, our preferred colours and it’s updated.

The struggle is dishes. Honestly I don’t mind doing dishes, when I have running water that is. If I have to bring water from the bathroom and wash in a basin I really consider every dish and utensil I am going to use!

Hence my excitement for a recipe that only uses a handful of spoons. Fewer items to wash in my makeshift sink.

I also like that this recipe only uses 2 bananas. So often you need 3 bananas for a recipe (like my favourite Banana Muffins). That’s great if you have 3 ripe bananas but for some reason, it always seems like there are only ever 2 bananas that are ripe at the same time.

So I end up freezing them or waiting until I get another ripe banana. Sometimes it’s nice to have an option for two ripe bananas.

As if that isn’t enough, you can add your favourite mix-ins to jazz up the 3 ingredients! Chocolate chips or raisins or coconut, whatever you’re feeling.

A lot is going for these cookies and then they taste great too. We eat them any time of day, morning, dessert or snack. They aren’t overly sweet so if you prefer a sweeter cookie you will want to add a few tablespoons of a sweetener (sugar, honey, maple syrup etc).

They’re quick to put together and kid-friendly. Especially if your kids love smashing bananas like mine does. So try this recipe the next time you have some brown bananas and need a healthy option for them!

Three Ingredient Oatmeal Cookies

Makes approximately 20 cookies

Prep time: 10 minutes

Bake time: 12-15 minutes

Ingredients

  • 2 ripe bananas
  • 3/4 cup smooth peanut butter
  • 2 cups quick oats

Optional mix ins:

  • Shredded coconut
  • Chocolate chips
  • Splash of vanilla
  • Cinnamon
  • Raisins

Directions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a medium-sized bowl mash the bananas. Add peanut butter and mix well. Add oatmeal and any additional mix-ins. Mix until combined.
  3. Drop by tablespoon full onto a baking sheet. Bake for 12-15 minutes or until done.
  4. Let them cool slightly on the pan and then move to a wire rack.
  5. Store in an airtight container on the counter for 2-3 days or in the fridge for up to a week.
