Taco Pasta

Mmm, nothing like an easy one-pot recipe that everyone will love. This is a pasta that I’ve had in my recipe tin for years. It’s fast, it’s forgiving and it’s so tasty.

We hadn’t had it in a while when I made it the other day. I forgot how simple it was. You can make it with a toddler hanging off your pants!

Yes baby B is now a toddler. He toddles around the house, falls down, gets back up and toddles around some more. It’s so sweet, especially when he carry’s the toy tool box from place to place like he’s going to work!

He’s also been in a mood the last few weeks. Driving me bananas. He whines and cries and just wants to eat Cheerios whenever I’m cooking.

It was two weeks of this and I thought I was going to lose my mind. I think he’s coming out of it, whatever stage or phase he was in. But wow was that frustrating.

Anyways this is a meal that was easy to make and both boys gobbled up. I’m not sure how many helpings my “new” toddler ate…that kid is like a machine when it comes to eating!

E enjoyed it too, and for those of you with picky kids, take note. My kid ate this meal without fighting. High five y’all!

My husband also loves it so I need to keep it on a more regular rotation.

When you read the instructions you’ll wonder what you’re missing but honestly it’s just that simple. If you want to spice it up, use medium salsa and/or pre shredded taco style cheese. You also can add drained beans.

So for those quick weeknight meals I recommend this easy pasta. Try it out!

Taco Pasta

Prep time: 5 minutes

Cook time: 25 minutes

Total time: 30 minutes

Ingredients
  • 1 lb ground beef
  • 1 package of taco seasoning (approximately 2 TBSP)
  • 2 cups water
  • 1 cup jarred salsa (we use mild)
  • 2 1/2 cups rotini pasta
  • 1 cup frozen vegetable of choice (peas, carrots, corn, broccoli etc)
  • 1 1/2 cups shredded cheese (cheddar is best)
Directions
  1. In a large high-rimmed pan, cook beef over medium-high heat until browned. Drain grease and return to pan.
  2. Add salsa, water and taco seasoning. Stir to combine. Bring to a boil. Add pasta and frozen vegetables. Return to boil. Reduce heat to low and cover. Simmer for 15 minutes or until pasta is cooked.* (Stir frequently)
  3. Remove from heat and add shredded cheese. Stir until melted. Enjoy!

Note: If your pasta is not cooked and your liquid is gone, add water by the TBSP
