Need some quick and easy oatmeal cookies? I’ve got the perfect recipe for you!

I love oatmeal and so do my boys. They also love cookies. So this is the perfect recipe that can make a sweet snack for them that also is (somewhat) healthy.

My other favourite part about these cookies is the fact that they only use one bowl and manual mixing. I love my stand mixer but when I’m in a hurry (and I often am) I want something that won’t require extra setup or cleanup.

A Few Things Before Starting

As always I have reduced the butter and sugar in this recipe. I don’t like overly sweet things and I don’t want my kids having the extra sugar either.

You also want to make sure your butter and egg is room temperature or slightly warmer. Sometimes I throw my butter in the microwave on the defrost setting for a few seconds to ensure it is good and soft.

This recipe is also great for kids to help with mixing. It comes together quickly and is a good workout for everyone involved!

Easy Oatmeal Cookies

Makes 24 cookies

Ingredients

  • 1 large egg
  • 1/3 cup butter very soft
  • 1/4 cup packed brown sugar
  • 1/4 cup white sugar
  • 2 tsp vanilla extract
  • 1 1/2 cups rolled oats not instant or quick oats
  • 3/4 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 cup chocolate chips

Directions

  1. Preheat oven to 350F and line two baking sheets with parchment paper.
  2. In a large bowl add the egg, butter, sugars and vanilla. Mix by hand vigorously for 90 seconds or until smooth and slightly fluffy (this should be a good arm workout!)
  3. Add the oats, flour, baking soda and chocolate chips and stir to combine.
  4. Using a 1 TBSP cookie scoop, form mounds (or balls) on the cookie sheets. Space them slightly as they will spread a little.
  5. Bake for 9-12 minutes. Less time will result in a softer cookie.
  6. Allow cookies to cool on baking sheet for 5-10 minutes before moving to cooling rack.
  7. Store in an airtight container for up to 5 days or freeze and pull out as needed!
