Yesterday was one of those days. E was not himself, fussy and easily frustrated. Whether it was teething, not enough sleep, needing to poop…I’ll never know. It’s hard as a mom sometimes, balancing your child’s emotions with your own. His frustrations become my frustrations as I try to figure out what he needs.

I remind myself that I am not his camp counsellor or activity coordinator. I kiss booboos, find healthy snacks and read stories but I do not have to keep him entertained every minute he is awake. Part of growing up is learning how to do things on his own, and even on days when he’s not himself, it’s still an important skill for him to work on.
So I tried to find that happy balance. Being patient and giving extra hugs but gently reminding him that supper did indeed have to be made by someone (and the dog has yet to learn how) so he would need to find something to do. I ended up putting on his truck show, which is just 30 minutes of big trucks doing what big trucks do. It kept him happy long enough that I could get everything together.
He ended up having an early bedtime and did not object to falling asleep. So I tidied up supper dishes and swiffered the floor. Between E and the dog there is always something to be picked up.
Then I decided I wanted to bake. So I pulled out my lemon lavender cookie recipe. A nice light, summery type cookie that goes well with herbal tea. Perfect for relaxing.

The best thing is that this recipe is easy to put together. I was able to make the cookies and clean up in the span of about an hour, while listening to an audiobook. Nothing complicated or drawn out, which is always my go to. It was a good way to unwind and take a break at the end of the day.

Lemon Lavender Cookies
- Prep time – 15 minutes
- Cook time – 10-12 minutes
- Makes 24 cookies
Recipe
Ingredients
- 3/4 cup sugar*
- Zest of one large lemon
- 1 TBSP dried lavender
- 1/2 cup coconut oil or butter
- 2 TBSP lemon juice
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups all purpose flour or whole wheat flour*
- 1/4 cup sugar (for rolling)*

Directions
- Preheat oven to 350F.
- Line baking sheet with parchment paper.
- In small bowl combine sugar, lemon zest and lavender. Use your fingers to rub it together until well combined.
- In the bowl of your mixer, combine sugar/lemon zest/lavender with the coconut oil. Beat on high for 1 minute.
- Add lemon juice, egg and vanilla and beat until well combined.
- Add baking soda and salt. Beat until combined.
- Add flour and beat until combined.
- Roll dough into balls, approximately the size of 1 TBSP.
- Roll balls in sugar and place on baking sheet.
- Bake for 10-12 minutes. They will look slightly undone, but this will give them a soft center.
- Let them cool for 5 minutes on the baking sheet before moving to a cooling rack.

*Notes:
I only use 3/4 cup of sugar as I do not like them too sweet. You can do a full cup of sugar for added sweetness.
You can sub in an equal amount of softened butter for coconut oil if you prefer.
You can use whole wheat flour but do not use the full 2 cups of flour, reduce by 2-3 TBSP.
I do not always roll my cookies in sugar, they turn out fine.
