Flourless Double Chocolate Oatmeal Cookies

What a week! We had family come help pack us up on Saturday. As they say, many hands make light work, or in our case, many hands keep the toddler busy so mommy and daddy can get stuff done! I am so thankful we have family who are close and willing to help us out. You don’t think you have a lot of stuff until you start packing it up.

I’m terrible at packing too. I get easily distracted, start a box, stop, start another box, reminisce about some old item I’ve found…it’s awful. It’s helpful to have other people there to keep you focused, pass you things or offer suggestions about how to make things fit. We got the kitchen 87% packed, pretty much all the non essentials. So I have no measuring cups, spices, baking items etc. The few things we left out we needed so we could eat and make easy meals. It’s been stressful because I need such a low carb/high protein diet so I can’t eat sandwiches all week but we made it work!

Anyways, we don’t officially move until tomorrow. I’m excited and nervous. Today is a busy day, and tomorrow will be worse. But it feels good to be in the home stretch.

So back to the cookies, I haven’t actually made them in a while but I promise they are delicious! They use oatmeal and almond flour so they are pretty low carb (although not completely carb free). I love oatmeal and I find it helps fill me up so I use it often. I use sugar alternative but you can use regular sugar too.

These cookies are easy to put together (no mixer required) and are tasty. They have a rich chocolate flavour, which is another favourite of mine. I haven’t made many adjustments from the original which is from Running With Spoons. If you need a different, somewhat healthy cookie, try this one!

Flourless Double Chocolate Oatmeal Cookies

Ingredients

  • 1 cup quick oats
  • 1/2 cup almond flour
  • 1/4 cup cocoa powder
  • 5 TBSP sugar (or sugar alternative)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 large egg
  • 3 TBSP coconut oil melted and cooled
  • 1/4 cup mini chocolate chips

Directions

  1. Preheat oven to 350 and line a large baking sheet with parchment paper.
  2. In a large bowl, combine oats, almond flour, cocoa powder, sugar, baking soda, and baking powder. Add the egg and coconut oil and mix until fully combined. Stir in the chocolate chips.
  3. Using a rounded tablespoon measure, scoop out the dough and roll into balls. Drop balls onto baking sheet and flatten slightly with your fingers.
  4. Bake for 7-9 minutes, until the edges begin to set.
  5. Remove from oven and let cool 10 minutes before transferring to cooling rack. Enjoy!
