
This is my favourite cookie recipe. I lived on these cookies at the end of my last pregnancy and the first few weeks when E was a baby. Anytime someone came to visit, if they offered to bake I asked for these. It’s an odd combination, I would never have thought to put Rice Krispies in cookies but it gives them a satisfying crunch.
I haven’t made them in a long time. I started craving them this week and thankfully have some Rice Krispies on hand (there have been supply issues and shortages on some cereals, oddly enough). I will have to stop using the Rice Krispies as an activity for E, seeing as I will need them for baking now!
I find these cookies to be on the “hearty” side of things. Often times I just need one to feel satisfied. Which is also good since I’m back to monitoring my blood sugars and need healthy treats. I’m diabetic, although I don’t check my sugars on a regular basis, just maintain a healthy lifestyle. During pregnancy I have to be more careful, so I’m pulling out some old recipes that I used in my last pregnancy.
Anyways, these cookies are easy to make and taste delicious. I didn’t have E help me, mostly because it requires the mixer and there isn’t much for him to do. He enjoys eating them, which is treat enough!
In terms of recipe, I haven’t changed much except to cut way back on sugar and chocolate chips. I like chocolate but I don’t want my cookies to be all chips, it’s just overkill. If you prefer a sweeter cookie, you will want to increase both the sugar and/or chocolate. I haven’t tried these with a sugar alternative although that will be the next thing to try. Oatmeal Chocolate Chip Rice Krispie Cookies
Makes 24 cookies
Ingredients
- 3/4 cup softened butter (or coconut oil)
- 1/4 cup brown sugar
- 1/4 cup white sugar
- 1 egg
- 1/2 tsp vanilla
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1 cup flour (I use whole wheat)
- 1 cup instant oatmeal
- 1 cup Rice Krispie cereal
- 1/3 cup chocolate chips
Directions
- Preheat oven to 350F. Like a baking sheet with parchment.
- Cream together butter and sugars until smooth.
- Add vanilla and egg, mix well.
- Add baking soda, baking powder, cinnamon, flour, oatmeal, Rice Krispies and chocolate chips. Mix until combined.
- Roll into balls and flatten slightly on baking sheet.
- Bake for 9-10 minutes.
- Let cookies cool on baking sheet until firm enough to move to a cooling rack.
