
Okay cottage cheese lovers, (or haters), here’s another recipe for you!
It’s lemon season. At least I find in the hot summer months I enjoy recipes with lemon! Fresh and fruity, it’s just what you need on a warm afternoon. And with a hint of lavender, this recipe is relaxing too!
Just what a busy mom needs. A refresh and relax at the same time. Especially this mom over here (lol). Our kitchen backsplash is almost done, 3 tiles away. They were short by 3 tiles! What has been done looks amazing and I am so in love with it. Finally finally finally, after over a year, I have a new kitchen.
I will post an update (before/after photos) once things are better organized. It’s quite the transformation let me tell you.
Kitchen renovations are no joke. We are never doing it again, I hope. But more on that later, back to the lemon pudding!
If you’ve read my other blog posts you’ll know my toddler also loves lemon. He’ll suck on them like an orange. He even asks for straight lemon juice in his water. So naturally he’ll eat this pudding. It’s pretty tasty so I don’t know why you wouldn’t!
Not only that but you can enjoy this “treat” without feeling guilty. I enjoy this pudding as a snack because it fills me up and satisfies my sweet tooth.
If you haven’t jumped on the cottage cheese variation bandwagon, you really should. It’s healthy, full of protein and versatile. Everything you could want!
So give this one a whirl, it’s sure to please!
Lemon Lavender Pudding
Ingredients
- 1/2 cup cottage cheese
- 2 tsp lemon juice
- 1/2 tsp dried lavender
- 1 TBSP sweetener
- 1/4 tsp vanilla
Directions
- Blend together ingredients (a traditional blender or immersion blender will work). You want your cottage cheese to be completely smooth.
- Taste and adjust sugar to preference.
- Refrigerate before serving.
Note: For a lemon blueberry variation add 3-4 washed and dried blueberries to your pudding and blend.
