Cottage Cheese Pancakes

We finally have good weather. Yay! Sunshine and warmth so we can be outside at 8:30 in the morning if we need to. It makes the days busier and I find I’m worn out by the end but it’s nice to let the toddler make a mess outside instead of inside!

I don’t know if I can call him a toddler anymore. He’s turning into a boy, or a kid or a preschooler? I’m not sure what the appropriate terminology is for his age. Regardless he’s getting so big.

He keeps telling me he’s growing into a big man so he can help rip out the kitchen! I wasn’t planning on having the boys in the house while the demo was happening but almost want to let him take a swing at some of the cabinets just for kicks.

The kid does love breaking things apart…

Anyways on to the recipe. E is probably getting so big because we eat these protein-packed pancakes once a week. I love cottage cheese and this is an easy recipe that packs a punch for lunch. Baby B enjoys them too, so it’s one meal I know everyone will eat (except my husband lol).

When your stove is cooperating they fry up just like a normal pancake. My stove likes to keep me on my toes and I burnt them a few weeks ago. My pancakes went from perfectly golden brown to burnt in a matter of seconds 😒

Needless to say, I’m really looking forward to the new kitchen with new appliances!

Anyways these pancakes are tasty and quick which is pretty much all you could ask for. I like to add some unsweetened coconut to the batter and then use coconut oil in my pan. Then they have a coconut flavour, yum yum!

But if you need a quick, high-protein meal, I highly recommend these!

Cottage Cheese Pancakes

Makes 8 pancakes

Ingredients

  • 3/4 cup cottage cheese
  • 2 eggs
  • 1 tsp vanilla
  • 1 TBSP sugar
  • 1/2 TBSP baking powder
  • 1/2 cup flour whole wheat or all-purpose
  • 1/2 tsp cinnamon
  • Optional: shredded coconut, raisins, chocolate chips

Chocolate Pancake Variation

For chocolate pancakes, add 1/2-1 TBSP of cocoa powder (depending how chocolatey you like it) to the batter and mix to combine. Continue to make as directed!

Directions

  1. In a medium sized bowl mix ingredients together until combined. Fold in additional mix ins (if using).
  2. Heat a frying pan over medium high heat. Add oil (coconut oil adds extra flavour). Cook pancakes until browned then flip. Continue cooking until done.
  3. Serve with preferred toppings. Enjoy!
