No bake chocolate oatmeal cookies are the perfect sweet treat anytime of year! They are easy, fast and everyone in your home is sure to love them.

It’s hot and you need a quick snack for your kids. You don’t want to turn the oven on and groceries are expensive so you haven’t been stocking up on unnecessary items. What can you whip up? I have the solution! No bake chocolate cookies are the perfect sweet snack on a hot day!
I love these no bake chocolate cookies. I still have terrible chocolate cravings from pregnancy, plus nursing a baby who eats all the time makes me hungry so it’s nice to have something that is filling. I’m not usually a maple syrup fan but it’s not noticeable in this recipe, so I can tolerate it. It’s also a family favourite in our house. A cheap snack option instead of reaching for a granola bar or something else store bought.

My mom used to make something similar, we called them “Hermits,” I don’t know what the actual name is but this recipe reminds me of them. It’s a stovetop recipe, so I haven’t made it with E. It is fast though, you can get them put together in 15 minutes. Technically you should chill them before eating but sometimes we can’t resist and dive in sooner!
I love all things oatmeal, especially if it has chocolate so these fit into my category of yummy foods.
These aren’t really healthy, except for the oatmeal. I also didn’t cut back on the sugar because it’s in liquid form (honey or maple syrup) and is needed to hold the shape of the cookie. Sugar is sugar, regardless of what form it’s in, so if you need something low sugar, these may not fit the bill. They sure taste good though!

No Bake Chocolate Cookies
Makes 20 cookies
Ingredients
- 2 TBSP coconut oil
- 1/2 cup peanut butter
- 1/3 cup maple syrup
- 3 TBSP cocoa powder
- 1 1/2 tsp vanilla
- 1 1/4 cups rolled oats
- 1/4 cup shredded coconut (unsweetened)
Directions
- Line baking sheet with parchment paper and set aside.
- In a medium saucepan, gently melt coconut oil, peanut butter, syrup and cocoa powder over low heat.
- Once melted, increase heat to medium and stir until mixture starts to boil. Boil for 2 minutes, stirring constantly. Remove from heat.
- Add vanilla, stir to combine.
- Remove from heat. Add oats and coconut, mixing until they are coated.
- Using a tablespoon measure, scoop cookies onto your prepared baking sheet.
- Chill in refrigerator until set, about 1 hour.
- Enjoy!

Notes:
You can use honey instead of maple syrup, or do half and half depending on preference.
If you don’t have any shredded coconut, increase oats by 1/4 cup.
Butter/margarine can be subbed for coconut oil.
