Banana Ice Cream

What a week. We’ve been doing flooring in the upstairs bedrooms. And by “we” I mean C and his dad, who came to help this weekend. Of course E helped too. I’m getting to the place in my pregnancy where I either have to sit or stand, getting up and down from the floor can count as a workout. So I wasn’t much help!

Anyways, it’s been busy (more on the renovations in another post) but I finally got around to making banana ice cream! E has been asking for ice cream for the last few days. We had a box of ice cream sandwiches that lasted forever and he’s lamenting the fact they’re gone. I had some bananas in the freezer ready to be made into ice cream so I whipped it up.

To say E liked it is an understatement. He loves bananas and ice cream so this was the perfect combination. I added a splash of milk, vanilla and peanut butter for extra flavour. He gobbled it up!

I like the fact that this ice cream is “healthier.” There’s no added sugar and it makes a good snack or dessert. And it’s so versatile. You can add fruit (strawberries, blueberries etc) or cookie bits to change it up. When it comes to feeding kids, sometimes a simple change is enough to get them excited.

Banana Ice Cream

Ingredients

  • 2 ripe bananas, broken into pieces (I cut them into 1/2 inch coins)

Additional mix-ins (optional):

  • 1 TBSP peanut butter (or to taste)
  • 1/4 tsp vanilla
  • Splash of milk (any kind will do)

Directions:

  1. Freeze your banana pieces in an airtight container. You want them to be completely frozen, overnight is best.
  2. Use a blender to mix up your frozen banana. I use my hand held immersion blender, blending small amounts at a time until it is smooth. You may need a splash of milk to help blend it altogether.
  3. Enjoy! You can eat it as is or add in your extra mix-ins and blend. Play around with your favourite flavours. Freeze leftovers.
