Skinny Funky Monkey Cookies

The original blog post (below) is short and sweet. One of the first posts I made and one of the first recipes E helped me with. A good memory for many reasons! I’ve updated the recipe and made some adjustments to improve taste and texture.

I needed a quick and easy recipe the other day that my 1 1/2 year old could help me with. Something without eggs and had minimal ingredients. So I pulled out a recipe I hadn’t used since university.

Skinny funky monkey cookies were a staple when I was running from class to class or writing essays. They were easy to make and felt like a treat that I didn’t need to feel guilty about!

I let E mash up the bananas and mix the ingredients. He did so well, didn’t even try to eat the batter. I think he could have stood and mixed all day long.

This recipe is easy and relatively healthy. The added sugar is optional as they get most of their sweetness from the bananas and apple sauce. The cookies also freeze well and make a nice snack or dessert. Sometimes I warm them in the microwave for a few seconds and top with ice cream! Yum yum!

Skinny Funky Monkey Cookies

(Makes 30 cookies)

Ingredients

  • 3 ripe bananas
  • 2 cups old fashioned oats (instant will work as well)
  • 1/3 cup creamy peanut butter
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup unsweetened applesauce
  • 1 tsp vanilla
  • 1/4 cup unsweetened coconut (optional)
  • 1 tsp honey or maple syrup (optional)
  • 1/4 cup chocolate chips (optional)

Directions

  1. Preheat oven to 350F. Line 2 baking sheets with parchment paper.
  2. Mash bananas in a large bowl, then stir in remaining ingredients. Let batter stand for approximately 20 minutes.
  3. Drop by tablespoon full onto cookie sheet. Flatten cookies slightly with the back of a spoon.
  4. Bake 10-12 minutes or until done. Cookies will be soft but not gooey.
  5. Store in an airtight container for up to 5 days.
