Blueberry Cherry Crisp

Blueberry season is wonderful. I like blueberries all year but they (like most fruits and vegetables) are the best when they are in season.

It also is the perfect excuse to make blueberry crisp!

This time I decided to change it up and add cherries to my crisp. I’m not a cherry pie girl. I don’t like pie filling or those bright red cherries. I like dark cherries, especially if you can pick them right off the tree. If not, store bought are good too!

I had bought a large bag of cherries that ended up being riper than I expected and there was no way we could eat them all before they went bad. So I took on the arduous task of cutting them up.

I don’t know if you’ve ever cut cherries but it’s not easy. And when they are ripe the juice runs everywhere. My fingers were stained red for days. It was worth it though.

I had already planned to make a blueberry crisp (my Lighter Blueberry Crisp) so decided to throw the cherries into it as well. Oh my goodness was it a good thought. The cherries added a sweetness to the crisp that took it to the next level. I loved it, my kids loved it…both boys had blue tongues after we devoured 3 bowlfuls for snack!

It was amazing. Totally worth the effort to cut up the cherries.

The crisp itself is easy to make too. Minimal prep and clean up but great results. I also love how easy the pan comes clean afterwards. I use a glass pie dish and it washes out in the dishwasher no problem. That’s a mom win if I ever saw one!

So if you find yourself with extra cherries this year, throw them into a blueberry crisp. You won’t be disappointed. Your fingers may be stained red but your taste buds will thank you!

Blueberry Cherry Crisp

Prep time: 15 minutes

Bake time: 40-45 minutes

Ingredients

Blueberry Cherry Filling

  • 4 cups blueberries (fresh or frozen)
  • 1/2 cup sliced cherries (fresh or frozen)
  • 1/4 cup granulated sugar
  • 2 TBSP cornstarch
  • 1 TBSP lemon juice
  • Dash of cinnamon

Crisp

  • 1 cup quick oats
  • 1/2 cup whole wheat flour
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 6 TBSP coconut oil or butter
Directions
  1. Preheat oven to 350°F. Prepare an 8×8” baking dish or 8” round dish.
  2. In a medium sized bowl combine blueberries, cherries, sugar, cornstarch, lemon juice and cinnamon. Mix until fruit is coated.
  3. Pour into prepared dish.
  4. In a medium-sized bowl combine oatmeal, flour, sugar and cinnamon. Mix well. Add coconut oil (or butter) and use your fingers or the back of a fork to mix it in until it resembles coarse crumbs.
  5. Put oatmeal mixtures on fruit in an even layer. Bake in preheated oven for 40-45 minutes. You want your fruit to be bubbly and top lightly browned.
  6. Let cool before serving!
