
Think bran muffins are boring? Think again! Nothing is boring about these muffins. Sometimes bran gets a bad rap and I don’t know why. Who doesn’t like a muffin that fills you up and empties you out? 😆 We all could use a little bran in our diets!
I made these muffins solo (crazy I know). I would have done them with E but he’s been busy with some “new to him” toys and I don’t want to interfere with this new activity. He also was napping so I decided to just do it alone.
Unfortunately B woke up before they finished and that complicated things. Life with a baby is always unpredictable, I never know if he’ll sleep or for how long. I remember these issues with E but it’s different when there’s just one. When I’m running the clock against 2 boys I don’t always win.
I was able to get them out of the oven and taste test, although baby B was none too pleased with me. I’m happy to say they were fluffy and yummy! Good for a quick breakfast or snack on the go.
I like to keep healthy options available, especially with a baby we need easy things. By “we” I mean me. I need snacks I can eat one handed while pulling a wagon with the baby strapped to me! I literally eat on the go.
These muffins are healthy, moist and delicious. I adapted the recipe from Allrecipes, changing things to resemble a gingerbread muffin. You can omit spices and replace the molasses with sugar if you prefer.
These taste really good with jam slathered on them or on their own! Give them a try!
Apple Sauce Bran Muffins
Ingredients
- 1/3 cup brown sugar
- 1 TBSP molasses
- 1/2 cup apple sauce
- 1/4 cup canola oil
- 1 egg
- 1 tsp vanilla
- 1/2 tsp salt
- 1 cup whole wheat flour
- 1 cup wheat bran
- 3 TBSP almond flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/4 nutmeg
- 1/4 tsp ginger
- 1 cup milk
- 1/3 cup raisins (optional)
Directions
- Preheat oven to 400F. Line or grease an 18 cup muffin tin or 30 cup mini muffin tin.
- Mix sugar, apple sauce, molasses, oil, egg, vanilla and salt in a large bowl. Stir until combined.
- Add flour, bran, almond flour, baking soda, baking powder and spices. Gently mix, then add milk and thoroughly combine. Fold in raisins (if desired).
- Pour batter into muffin tins. Bake regular sized muffins for 12-14 minutes and mini muffins for 7-9 minutes or until done.
