Some weeks are slow slow slow around our house. And some weeks it’s like everything happens at once. This week was one of those crazy weeks.
(A Story If You Want to Hear it)
The road in our subdivision was (finally) being paved. What a relief. However, it meant we were essentially trapped here while they worked. If we wanted to leave, we had to move our vehicles ahead of time to another street, which is of course busy with construction trucks. And just about everyone needed to park a vehicle out there. To say it was a gong show is an understatement.
Trying to get the dog out for a walk was next to impossible. I couldn’t take the stroller or wagon out and Hobbs needs a good long FAST walk, like we’re talking a hot sweaty walk. We managed some small walks but not what we usually do and the poor dog stared at me forlornly for a few days.

We also had to reschedule E’s dentist appointment to ensure we would be able to get there in time. We did make it, thankfully. It was his first appointment ever and he was not impressed with the office or the fact people wanted him to open his mouth. They had Netflix though and at the end of the appointment he had warmed up to the place.
By the time we got home they were nearly finished paving. I still had to park across the street. It was a bit of a hike to get to the house with a heavy toddler and some groceries. Through the ditch, across a backyard and down the road, all while it was starting to drizzle. We made it, only slightly damp but in one piece.
So it’s been an interesting week. But with all that being said, E did love watching the guys work. He stood at his bedroom window for a long time watching as they paved the road out front. And when we did get outside he was thrilled with all the dump trucks and rollers that were in action.
I am glad it’s done. We are one step closer to not living in a construction zone anymore. I’m at my wits end with all the dirt and sand that comes in. I had our Roomba vacuum going this afternoon and I also pulled out the hose for the central vac. I was that crazy person, running two vacuums at the same time because I. Can’t. Stand. The. Dirt!
Anyways after we finished vacuuming, E needed something else to do that didn’t involve emptying my cupboards. So I decided to let him make his own snack. This Chocolate Peanut Butter Banana mug cake was just the thing for him.

Perfect Snack for Kids!
It’s easy to put together and doesn’t involve raw egg. He mashed the banana and poured in the other ingredients that I had premeasured for him. Not all of the chocolate chips made it into the batter, but who was counting? Once it was mixed we poured it into a microwave safe mug and I cooked it. Once it cooled he and I shared it. He thoroughly enjoyed it!
It’s nice to let him do constructive activities and help out with making food. It’s messy and leaves more dishes than if I had done it on my own but we’re making memories. That and he’s learning important skills. I look forward to doing more cooking with him.

One last note about this minute cake. I like that it is somewhat healthy, and has a little bit of protein from the peanut butter. It may seem small but it is filling. You also can adjust the sugar to your own liking, I’ve used sugar alternatives and they work just as well. I will say it’s not light and fluffy like a regular cake, it has more of a crumbly texture. The flavour is really good though. So if you need a mid afternoon snack for your kids (or yourself) this is a great option!
Chocolate Peanut Butter Banana Mug Cake
Ingredients
- 1/2 banana (riper is better)
- 1 1/2 TBSP all purpose flour – see note for whole wheat
- 1 tsp cocoa powder
- 1 tsp sugar
- 1 TBSP peanut butter
- 1/2 TBSP chocolate chips plus a few extra for top
- Splash of vanilla (optional)
Directions
- Mash up banana.
- Add remaining ingredients and mix well.
- Microwave for 20 seconds, stir. Add a few extra chocolate chips to the top.
- Return to microwave for an additional 50-60 seconds.
- Enjoy!
Notes:
This cake will be crumbly.
If using whole wheat flour do a heaping Tablespoon.
