I found this recipe for Healthier Greek Yogurt Alfredo Sauce (click the link if you would like to see the original version from “Far From Normal”) when I was looking for a homemade Alfredo sauce. The first ones I looked at used a cup of heavy cream and a cup a milk and a cup of Parmesan cheese, and the number of jumping jacks it would take to work that off wasn’t going to be worth it. If I’m going to eat calories it’s going to be a brownie or a Frosty from Wendy’s.
Anyways I started looking for healthier options because I know they are out there and came across this one that uses Greek yogurt. I had a tub on hand from our lettuce wraps last week and figured I would give this recipe a try!
I will say it tasted good although it ended up being runny. I’m not sure if this was my doing, E decided to show up in the kitchen with his dump truck mid way through making supper. I nearly broke my neck on the truck, the dish towels and random plastic plate he left in my path between the sink and stove. The fact I was able to whip it up amongst the chaos speaks to how easy it is to make!
We ate it with tortellini and broccoli. Made a good leftover which is handy. So all in all I was happy with the result! I don’t have any pictures, things are so crazy around mealtimes I never remember to snap a picture. I’m sure you can imagine what it looks like!
Healthier Greek Yogurt Alfredo Sauce
Ingredients
- 2 TBSP olive oil
- 2 tsp minced garlic
- 2 TBSP flour (I used whole wheat)
- 1 cup chicken broth
- 1/4 cup plain Greek yogurt
- 1/4 cup milk (I used 1%)
- 3/4 cup Parmesan cheese
- Salt to taste
Instructions
In saucepan combine olive oil and garlic over medium heat. Cook for a few minutes and then add flour stirring constantly until nice and bubbly.
Add chicken broth while continuing to stir constantly, make sure you don’t have any lumps!
Turn heat to low and add milk, yogurt and Parmesan cheese. Stir until smooth. Salt to taste.
Serve over noodles, veggies or whatever you like! Enjoy!
